This recipe is one of my favorite morning go-tos! It’s quick and easy to make morning of or night before consuming and makes plenty of leftovers for storage! The dish is also nutrient rich with a great source of fiber, iron, protein, and healthy fats that is sure to super boost and sustain your energy throughout the day!
Ingredients:
3 1/2 cups of rolled oats
1 cup raw nut/s of choice (my favs are almond, cashew, and walnut)
1/2 cup raw seed/s of choice (my favs are pumpkin and sunflower)
1/2 cup dried fruit (my favs are raisins, cranberries, and golden berries)
1/2 cup of coconut flakes
1/4 cup maple syrup (depending on how sweet you like it)
1/3 cup melted coconut oil
1/2 tsp sea salt/ himalayan pink salt
1/2 tsp cinnamon
Lots of love
Sprinkle flaxseed or hempseed on top for an extra Omega Boost! (optional)
Instructions:
Preheat oven to 300 degrees F. Grease 2 baking sheets with coconut oil or line with parchment paper.
Mix all of the ingredients in a large mixing bowl.
Spread mixture evenly between the two baking sheets.
Bake 20-24 minutes or until golden brown, stirring half way.
Let cool before enjoying with your favorite milk or yogurt, and fruit.
Let cool completely before storing leftovers in an airtight container up to a month.
